Creamy Soba Noodle Suprise
1.5oz soba noodles, canned tomatoes (a good thing to always have on hand is diced tomatoes in garlic and olive oil they are so good.) chopped vegetables (I use brocolli, mushrooms and spinach), 1oz goat cheese, Morning Star farm crumbles
Cook the noodles and at the same time stir fry the veggies till they get nice and crisp; right before the veggies are almost done add in the morning star farm crumbles and the diced tomatoes. Combine the soba noodles with the cooked veggies and top with the goat cheese…. you will not be let down by this one!
