My grandma had bought these for me to have at their house. They are really really good, but tiny little guys. 4 of these are 110 calories, they are low in fat and made with all good ingredients. I guess if you added 4 togther they are about the size of a veggie burger which is not too small.
What I like about these is they have great flavor, you see the chunks of veggies (corn) and they are done in less than a minute and you can add them to so many dishes!
PUMPKIN PANCAKES with AGAVE/APPLE/CAROB Sauce
Ingredients
- 1/4 cup oatbran & little less than 1/4 c whole wheat flour because I added about 1 tbsp of carob powder too
- 1tsp baking powder
- 1/4 c pumpkin
- 1/2 c vanilla soy milk
- 2 egg whites
- 2 tbsp apple sauce
- 1/2 tsp of olive oil
- pumpkin pie spice, pinch of salt, drop of vanilla
I mixed that all up… and cooked them in the pan made about 5-6 decent size pancakes. I drizzled them with 1/2 tsp of agave for a little sweetness and than I mixed couple tbsp of pumpkin with tsp of agave and tsp of carob powder to make a nice spread for the pancakes… def a nice change for breakfast!
LUNCH AT WORK
Its always hard ordering lunch at work because I try to get some protein in but the places we order from dont always have the healthiest vegetarian options. So today I bought a plain chobani to get the protein in which gave me more options for the main course. I decided to get a WHOLE WHEAT WRAP WITH MIXED VEGGIES, ROMAIN LETTUCE AND MOZZ CHEESE (I ASKED THEM TO GO LIGHT ON IT) I GOT SOME FF HONEY MUSTARD DRESSING ON THE SIDE. This was so good… and I didnt have to worry abotu getting protein in since I had my yogurt. I think I will do this from now on.
In the yogurt I mixed 1/4 sliced apple, 1 tbsp of wheat germ and tbsp of honey roasted peanuts… this was SO GOOD!
QUESTION: Do you guys feel guilty when you eat healthy stuff from a “to-go” place or restaurant. We often eat more or dont have as much control. This is something that I use to let control me to the point I would aviod certain social gatherings etc.. I think like everything else it needs to be a balance.
** I have 10 pages down on my research paper, looks like Ill be able to have some fun time this weekend since I wont be worrying as much about the paper.!! Hope you guys hae a some fun stuff planned for this weekend.

Christie, that pancake recipe is MARVELOUS!!! Such a wonderful mix of flavors/ingredients!!
I prefer to make my own meals, since I love cooking and like being able to add certain spices, seasonings, etc. in the amounts that I want – and it’s more FUN getting to prep your own meals!
Don’t feel guilty though!! As you said, it’s all about balance.
Best of luck on the rest of your paper – you’re definitely making great progress on it!!
Enjoy your weekend

Your pancakes looks amazing!

I don’t feel “guilty”, but I don’t like eating stuff that I don’t cook – I like knowing how things are prepared and I love cooking for other people too. I feel pretty limited when looking at menus for a lot of the places that people at work tend to order from because I try to eat mostly vegetarian and they all like greasy, unhealthy, and very meaty foods.
Sounds like you’re doing great on your paper!

Yes. I totally agree about the control thing and not wanting to even eat healthy food out because not knowing portions. Case in point, Whole Foods salad bar. I go there, I gaze longingly. I know I’d only get healthy options. But I can’t even add roasted turkey or carrots without freaking out because I’m not measuring. I end up getting a carton of lettuce, taking it home, and adding my own, measured, amounts. It sucks. I realize that this degree indicates I need counseling, but I just feel like counseling is a self-indulgent when I’m already admitting I have a problem.

Thanks for the review!! Ooh, and for posting an AMAZING pancake recipe! A nice change for breakfast, indeed
I’m bookmarking this one!
I don’t really feel guilty, but I definitely feel a little more stuffed when I eat at to-go places because I tend to eat what’s given to me without stopping and enjoying my meal. That’s why I’ve tried to avoid going out and make and effort to eat more of my meals at home. That said, if a friend or family member invites me out to eat, I will definitely go – the company is much more important to me!
Good news about your paper!! Definitely enjoy the weekend, Christie!

I love veggie meatballs. =) I usually make them myself (I can’t find them here in London). Good call on the yogurt.

I don’t always eat healthy and it really doesn’t bother me anymore. Since I started intuitive eating, I do have guilt when I eat thing I DON’T enjoy something which is furthing my ability to eat what I want. I just don’t eat things that don’t taste good. Sometimes that means I eat healthy and sometimes it doesn’t. Sometimes it means I eat on the go and sometimes it doesn’t.

I don’t usually feel guilty. My strategy is to throw away whatever I know I don’t need before I eat it all. That helps!
But I like to splurge every now and then, too, and eat more than I should. It’s just enjoyable for me!

I can’t wait to try those pancakes this weekend! They look great.
I don’t really feel guilty when I get healthy food “to go” but I try to do what you do– make sure the meal is well-balanced by adding my own complements like yogurt, fruit, or nuts if necessary. It’s a great tactic and seeing how you manage it is very helpful!

I prefer cooking for myself, but I do have the social gatherings the require me to eat healthy at ‘to go’ places. I try not to, but I do always end up feeling guilty afterwards. I hate not having control over my food. The funny thing is I have no problems eating at nice sit down resteraunts and never feel guilty about that. I am so strange sometimes.

Veggie girl: thanks hope you have a good weekend too!
Meghan: i cant keep up with all your pumpkin recipes!
Magpie: i agree i enjoy making my own stuff just because Ihave more control of what goes into it
Chloe: I think you should look at it as more of an INVESTMENT in your future an your health… it will add to your quality of life and help you deal with these situations. There are certain things i think worth measurign but you have to be able to adapt to situations and not feel guilty. I really suggest seeing someone, trust me when I say it is freeing to let go of some of those RULES.
Eatingbender: I agree company is worth the sacrifice and it is good to let lose and enjoy yourself sometimes and not worry so much about that food
Melissa: I hope you try it.. i love when people try stuff i made/came up with and enjoy it!
Monica: I would love to know the recipe you use for yours… these ones are great in a pinch
ttfn: thanks… i think eating more natural has gotten me away from needing my foods to be super sweet the pancakes and yogurt are great and satisfy me but they are not super sweet
Beadie: great philosphy.. i have thrown a lot of my food rules out the window and have made strides towards intuative eating.. but some are harder to break than others as I am sure you would agree.
Erin: i agree and i think it is onlyhealthy to have that approach
TFH: I HOPE YOU MAKE these.. def let me know if you do.. yes I think healthy living is like anythign else you learn as you go and adapt it to your life.. you can be perfect all the time so you cant expect your eatign to be eaither.
Meghann: like I said some things are a longer learnign lesson than others but when we focus on health it is easier to get comfortable in situations and know what the right choice is for us at that moment and eventually the guilt will go away.

Great looking recipe.
I do feel a little guilty when I eat out. Mostly because I know that my own food is so much healthier. At the same time though, I do enjoy eating out. I try to stop when I get full.
